Creating Brunch On Your Crockpot

If it comes to foods, brunch is often a favorite of mine. Brunch usually features an range of cakes and breads. That is my type of meal.

I’d love to talk about a few recipes . The first is to get an apple cider cake. It cooks up in two hours and may be served hot, right from the crockpot.

In a large bowl, mix All the following:

2/3 cup applesauce – I constantly use sweetened applesauce in cooking
1 egg, slightly beaten
2 cups Bisquick
1/4 cup milk – we use nonfat milk
2 tbsp white sugar
2 tbsp butter – room temperature
2 cooking apples, cored peeled and cut into little, bite-sized pieces
1 tsp vanilla
1 tsp cinnamon

After ingredients are blended, pour into a crockpot. Then, mix together the topping:

1/4 cup Bisquick
1 tsp cinnamon
1/4 cup brown sugar
2 tbsp butter (you do not want the butter at room temperature, however you need it softened a bit from fridge temperature)

Sprinkle the topping on top and cook on high for two 1/2 hours. You may fool around with the ingredients to suit your preferences. Replace the milk using sour cream or plain yogurt. Should you enjoy a nutty taste, then add 1 teaspoon of lemon infusion. You might even add chopped nuts. If you do not need to utilize sugar, consider using Splenda instead of the sugar.

Another recipe I’d like to talk about is for a very sweet cherry bread:

1 1/2 cups all-purpose flour
2 eggs
6 oz maraschino cherries – trimmed cherries into little pieces
1/3 cup syrup in the cherry jar
3/4 cup white sugar
1 1/2 tsp baking powder
1/4 tsp salt

Mix together the flour, baking powder and salt. In another bowl mix the sugar and eggs, beating until thick. Add in a few of the dry components and some of the cherry syrup and blend well. Continue adding gradually until all ingredients are well blended. Insert from the cherries and gently mix in. With this recipe, you are going to utilize a 2 pound coffee can. Set the dough in the coffee can and cover with several layers of paper towels. Place in crockpot and cook on high about two 1/2 hours. Eliminate coffee can and allow to cool before removing bread.

We like to include in chocolate chips. Other folks like to incorporate in nuts. Use about 1/2 cup of nuts or chocolate chips. Mix in at the end when you blend from the cherries.

These are both terrific dishes to serve at your next brunch. They cook as you’re getting everything set up.
